What is Persimmon?

Fuyu persimmon is a type of persimmon fruit that is native to Japan, but is also widely cultivated in other countries such as the United States, Spain, and Israel. The Fuyu persimmon is known for its distinctive shape, which is similar to that of a tomato, and its bright orange color.

Fuyu persimmons are typically eaten when they are ripe and have a sweet, slightly tangy flavor. They can be eaten raw, sliced or diced in salads, or used in various recipes such as baked goods, jams, and desserts.

One of the unique features of the Fuyu persimmon is that it can be eaten while still firm and crisp, unlike other persimmon varieties that require a soft and mushy texture before they are ripe enough to eat. This makes it a popular choice for adding texture and sweetness to dishes.

Fuyu persimmons are also a good source of vitamins A and C, fiber, and antioxidants, making them a nutritious addition to a balanced diet. They are typically in season from late fall to early winter.

Ingredients
  

  • 5 cup salad mix
  • 1 Persimmon peel, and cut into bite-size
  • 4 slices prosciutto
  • 4 tbsp walnuts chopped
  • 3 tbsp goat cheese crumbled

Dressing

  • 1 tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 1.5 tbsp honey
  • 1 tbsp onion grated
  • 1/4 tsp soy sauce
  • salt
  • black pepper

Instructions
 

  • Put salad mix, cut and peeled Persimmon, prosciutto, walnuts, and goat cheese crumbled on a plate.
  • Combine dressing ingredients in a small bowl, and pour on the salad.
