Persimmon Prosciutto Salad. Fuyu persimmons sweetness and prosciutto saltiness make a great flavor! Blue cheese crumbles or feta cheese crumbles would be nice other than goat cheese crumble! Ingredients
  

  • 5 cup salad mix
  • 1 Persimmon peel, and cut into bite-size
  • 4 slices prosciutto
  • 4 tbsp walnuts chopped
  • 3 tbsp goat cheese crumbled

Dressing

  • 1 tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 1.5 tbsp honey
  • 1 tbsp onion grated
  • 1/4 tsp soy sauce
  • salt
  • black pepper

Instructions
 

  • Put salad mix, cut and peeled Persimmon, prosciutto, walnuts, and goat cheese crumbled on a plate.
  • Combine dressing ingredients in a small bowl, and pour on the salad.
