What is Radicchio?
This leafy vegetable is a member of the chicory family and has a slightly bitter taste that pairs perfectly with sweet and savory ingredients. It’s also rich in antioxidants and vitamins, making it a great addition to any healthy diet.
One of my favorite ways to enjoy radicchio is in a salad. Simply mix some torn radicchio leaves with other greens like arugula or spinach, add some sliced apples or pears for sweetness, and toss with a simple vinaigrette made with olive oil, balsamic vinegar, and Dijon mustard. Top with some crumbled goat cheese or nuts for crunch, and you’ve got a delicious and nutritious salad that’s sure to impress.
Another great way to use radicchio is by grilling it. Cut a head of radicchio into wedges, brush with olive oil, and season with salt and pepper. Grill until charred and tender, and serve with a drizzle of balsamic glaze or honey for sweetness.
So, don’t overlook this humble vegetable in your next grocery trip. Give radicchio a try and let me know how you enjoy it!
