
What is Karaage?
Hey there, foodies! Today, I want to talk about one of my all-time favorite Japanese dishes: karaage.
Karaage is a type of Japanese fried chicken that’s marinated in soy sauce, ginger, and garlic before being coated in a light batter and fried until crispy. It’s incredibly flavorful and juicy on the inside, and the crispy exterior provides the perfect crunch.
What’s great about karaage is that it’s easy to make at home and can be enjoyed in a variety of ways. Serve it up as an appetizer with a squeeze of lemon and some homemade mayo or use it as the main protein in a rice bowl. You can also make a karaage sandwich with some lettuce and a drizzle of spicy mayo for a delicious lunch option.

My mother was a master of Karaage, and this is her recipe! Most of the day, I brought my bento lunch box to school, and I exchanged some of the food in bento with my classmate. She kept telling her mom how great the Karaage was. One day, my classmate’s mother called my mother and asked about the Karaage recipe. I remember I was so proud of my mother!
Party
I love inviting my friends over my place, and people loves this Chicken Karaage the most. I’ve made 3-4lbs chicken karaage, but usually they finish all of them. The best party food!

Chicken Karaage
Ingredients
- 1 lb chicken thigh boneless and skinless, cut into bite size
- 1 tbsp sake
- 2 tbsp soy sauce
- 1 tbsp grated ginger
- 1 clove garlic grated
- 1 tsp sesame oil
- cooking oil for frying
Instructions
- In a ziplock bag, combine the chicken, sake, soy sauce, sesame oil, ginger, and garlic. Mix well. Marinate for at least 15 minutes in the fridge.
- Drain extra marinate mix. In a bowl, coat chicken with potato starch.
- Heat the oil to 340˚F (170˚C). Fry the chicken until golden brown and fully cooked, 5-7 minutes.
