- 8 oz wide rice noodles
- 2 tbsp vegetable oil
- 1 tbsp garlic minced
- 1 cup protein of your choice (chicken, beef, or tofu) sliced
- 1/2 tsp salt
- 5 stems Chinese broccoli divide stem and leaf, cut into bite-size
- 2 eggs lightly beaten
Sauce
- 1 tbsp dark soy sauce
- 1 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tsp vinegar
- 2 tsp sugar
Garnish
- Lime wedges Optional
- cilantro Optional
Make a sauce: In a small bowl, mix soy sauce, oyster sauce, dark soy sauce, sugar, and vinegar. Set aside.
Noodle: Cook the wide rice noodles according to packet directions, drain and set aside.
Season Protein: Meanwhile, season the chicken (or protein of your choice) with salt.
Sauté garlic: Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté for 1 minute.
Cook protein: Add chicken (or your choice of protein) to the skillet and cook until browned. Remove from skillet and set aside.
Stem then leaf: Add Chinese broccoli stem. Stir-fry until tender-crisp. Then add leaf.
Scramble the eggs: Push the protein and veggie to one side and pour lightly beaten eggs into the empty space. Scramble the eggs until slightly runny.
Set aside: Transfer the protein and veggie to a plate, and set aside.
Noodle and Sauce: In the same skillet, heat the oil. Add the drained rice noodles to the skillet and pour the sauce and toss.
Put together: Add the cooked protein and veggie back in and stir-fry for a minute until everything is heated through.
Adjust: Taste and adjust the seasoning, adding more soy sauce or brown sugar if desired.
Serve with garnish: Serve hot, garnished with cilantro and lime wedges. Squeeze lime juice over the noodles before eating.
