Sauce: Combine soy sauce, oyster sauce, garlic, ginger, and brown sugar into a medium bowl.
Prepare Sous-vide bag: Put meat into a sous-vide bag and add the sauce above.
Start Sous-vide: Set the sous-vide, water to 168F (75C) and let it cook for about 10 hours.
Rest: Once done, allow it to cool down and refrigerate overnight.
Making Glaze: In a sauce pan over medium-high heat, add garlic, soy sauce, honey and allow the mixture to simmer, letting the flavors meld together.
Pork Belly and Glaze: Before you serve, cut the pork belly into 1.5 inch pieces, sear the pork in a pan, and Pour the glaze into a pan.
