Sous Vide Pork Belly with Honey Garlic Glaze

Ingredients
  

  • 2-3 lbs pork belly
  • 2/3 cup soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp garlic minced
  • 2 tbsp ginger grated
  • 1 tbsp brown sugar

Honey Garlic Glaze

  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1/3 cup honey

Instructions
 

  • Sauce: Combine soy sauce, oyster sauce, garlic, ginger, and brown sugar into a medium bowl.
  • Prepare Sous-vide bag: Put meat into a sous-vide bag and add the sauce above.
  • Start Sous-vide: Set the sous-vide, water to 168F (75C) and let it cook for about 10 hours.
  • Rest: Once done, allow it to cool down and refrigerate overnight.
  • Making Glaze: In a sauce pan over medium-high heat, add garlic, soy sauce, honey and allow the mixture to simmer, letting the flavors meld together.
  • Pork Belly and Glaze: Before you serve, cut the pork belly into 1.5 inch pieces, sear the pork in a pan, and Pour the glaze into a pan.
