Ingredients
  

  • 2 pkgs Udon Noodle
  • 1/2 lb Ground Pork
  • 2/3 cup Peanut Butter
  • 1 tbsp Dark Soy Sauce
  • 3 tbsp Soy Sauce
  • 1 tbsp Gochujang
  • 2 tbsp Rice Vinegar
  • 1 tsp Garlic grated
  • 1 tsp Ginger grated
  • 1 tbsp Maple Syrup
  • 2 tbsp Chili Oil
  • 2 tbsp Green Onion Sliced
  • 2 tbsp Peanuts Chopped

Instructions
 

  • Cook the Udon Noodles: Prepare the udon noodles according to the package instructions. Typically, they need to be boiled in water until tender. Once cooked, drain and rinse under cold water to stop the cooking process and set aside.
  • Prepare the Pork: Heat a skillet over medium-high heat. Add the ground pork and cook until it’s nicely browned and crumbly. Make sure to break it apart with a spatula as it cooks.
  • Make the Sauce: In a bowl, combine the peanut butter, dark soy sauce, soy sauce, gochujang, rice vinegar, grated garlic, grated ginger, maple syrup, and chili oil. Mix well until all ingredients are well incorporated and you have a smooth sauce.
  • Combine Ingredients: Toss the cooked udon noodles in the skillet with the ground pork. Pour the prepared sauce over the noodles and pork, and stir well to ensure everything is evenly coated.
  • Garnish and Serve: Once everything is hot and well mixed, transfer the noodles to serving bowls. Garnish with sliced green onions and chopped peanuts for extra flavor and crunch.
