  • 2 green onions sliced for garnish

  • 10 oz canned baby clams with juice
  • 8 oz canned bamboo shoots
  • 2 tbsp sake
  • 2 tbsp mirin
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp dashi powder
  • 2/3 cup water

  • Prepare the Ingredients: Start by cooking your Japanese short-grain rice according to the package instructions. For the best texture, ensure the rice is slightly sticky, which is perfect for absorbing the flavors of the mix.
  • Make the Seasoning Mixture: In a small bowl, combine the sake, mirin, soy sauce, sugar, dashi powder, and water. Stir well until the sugar and dashi are completely dissolved. This mixture will create a flavorful base that infuses the rice with delightful umami and a hint of sweetness.
  • Cook the Clams and Bamboo: In a skillet or pan, pour in the seasoning mixture and bring it to a gentle simmer. Add the baby clams along with their juice and the bamboo shoots. Let them simmer in the seasoning for about 5 minutes to allow the flavors to meld together beautifully.
